Raw, Hulled Buckwheat Groats
I use Thai coconut meat in many of the recipes in our book. I have found that 3-4 Tbsp. of coconut creme is an excellent substitution for the meat of one Thai coconut. It is less expensive than purchasing Thai coconuts and it is much more convenient for those that haven’t had much experience opening coconuts.
This is what I found on the Vivapura website:
“Unlike any other coconut butters or creams, Cocopura Coconut Creme is low-temperature, stone-ground from raw, organic Coconut Flakes. Never any extra sweeteners or fillers. This low-glycemic decadence is a great source of essential amino acids, dietary fiber, protein, vitamins and minerals – a highly nutritious whole food.”
I’ve purchased raw seeds, nuts, oat groats and dried fruits from their site. Their dates are delicious! They are one of the very few places that have truly raw oat groats that will sprout! There germination rate on all there sprouting seeds and grains is very high (usually over 90%).
