Great approach – one step at a time! The videos make it easy and have great PRACTICAL tips. I’ve made your kale chips (husband devoured them), healthy fries (neighborhood kids loved them – thanks for adding these transition recipes!!), flax wraps and Italian wraps, and lots more. Bought the vac-n-seal you recommended – great, quick and easy to use. Making chia gel is a great tip too – I can easily make crackers out of my juice pulp. At the moment it still seems like alot of work, but I know that it will get easier once I gain experience and create a staples stash.

Just wanted to let you know how much I appreciate your ebook! I have been experimenting with your recipes and like them because they usually call for less nuts and I can add additional things I want to them, if I like. I am not completely raw, but I strive everyday to have at least 70% raw diet. I bought HP blender, juicer and dehydrator (need to get the hang of that better), but the blender is one of the best inventions man has ever come up with! If push comes to shove, I would do without my iphone, but never without my blender. Your ebook has been great because there are a wealth of simple nutritious smoothie recipes so I can experiment and never get bored. Thanks again-your knowledge and insights have really helped me embrace the healthy food lifestyle.

I just wanted to thank you again for your free online videos on making sauerkraut. You really motivated me, and I’m so glad I invested in a Harsch crock. I’m so glad I purchased the 10 liter Harsch crock. I filled it up less than halfway for this first batch, but next time I will add a lot more cabbage and other vegetables and will share some with friends and family. For this batch I used 2 heads green cabbage, 1 head red cabbage, 1 daikon raddish, some dulse, Celtic Sea Salt, juniper berries and fennel, and for a starter, a 16 oz jar of raw sauerkraut that I purchased at a local health food store. That store-bought sauerkraut cost me ten dollars, so that motivated me even more to make it myself! And I love the taste of my homemade sauerkraut, customized with my favorite spices, which I’m enjoying even more than even the expensive raw store-bought kraut that I’ve tried. Thank you again for your wonderful books and videos and also for sharing your personal story of how you improved your health so dramatically when you transitioned to living cuisine.

Your book is exactly what I’ve been wanting (i started my stash and I made my first batch of crackers over the weekend)! I’ve heard Florida has been unseasonably cold (I lived in Ft Lauderdale for many years) so I know what a shock it is down there, as no one ever expects it that far south! I’ve got some exciting things developing this year…..and I need lots of energy to accomplish everything…..at 47 I’ve got a number of years of toxic sludge to clear out. I’ve been working on fixing my leaky gut for many years now…it’s what brought me back to being a vegetarian and ultimately to living food. I thought I?d just send you another encouraging e-mail. My husband and I were invited to a New Year?s Eve get-together and were asked to bring some buffet food to share so I decided to make some of your recipes as I like watching the videos and it helps me make a recipe when I see it done. So I took along a tub of Chili Flax Crackers, some Cashew Cheeze Pate, some Tahini Carrot Dressing with Crudites and some familiar ?cooked? hummus. Well, I got loads of good comments about the crackers and a recipe request and the other spreads and dip went down well, too.
My husband thought they might have tried them once out of politeness but actually they were coming back for more ? even 2 twenty year old sons of some friends returned to the table to get more. There were the usual cheese and biscuits available but I think people liked the ?unusualness? of the raw equivalents.
The recipes made loads so I put them out for a family buffet on New Year?s Day. Unfortunately my adult family doesn?t appreciate my raw food lifestyle!
By the way, my husband does NOT do raw but I think he secretly admires my efforts because he has requested 2 raw meals a week as long as I don?t do weird food but make them like ?familiar? cooked meals AND that they don?t leave him feeling unsatisfied. So, on Tuesday I made spiralised noodles of carrots, swede and courgettes, massaged them to al dente with salt, rinsed and drained them and folded in your Cashew Cheeze then poured some raw tomato sauce over and served with a green salad. He was surprised to find it filled him up but managed a raw Bliss Ball after!
My 17yr old daughter, Amy, requested pasta and tomato sauce that evening so she was given the same meal, as, indeed it was, but she was not so impressed and, although she admitted it tasted quite nice she protested that I lied to her (as it was not the usual cooked version)! Teenagers!!!!
Tonight I?m dehydrating some raw nut/veggie burgers and making some cauli/parsnip mash and a raw tomato ketchup for my husband but somehow I?d better not spring that on my daughter and 15yr old son as well!
Anyway, I hope you have a really happy and healthy year ahead and I look forward to your interesting and inspiring Newsletter and Blog as ever.

The kale I got from my community supported agriculture project is quite spicy, almost hot, as is everything I am getting from them theses days and it is very curly so it turned out quite differently than I think yours does but it is wonderful. Just to tell you, how grateful I am for your inspiration. Saw the video about sprouted, dehydrated buckwheat. Then a friend “accidently” got 25 kilo of organic buckwheat instead of 5 kilo. She gave me some for experimenting.
Now I just made the best brownie ever! Substituted half of the nuts with buckwheat… Yummi. Dates, walnuts – or pecans, buckwheat, cacao-powder and whole beans, bit of grated orange zest and a few dried mint leaves. All raw and organic. My friends are asking for the recipe.

I used to do “smoothies” before by putting together nuts fruits (almost never any greens), fruits etc and a fill blender of water – and did not really liked the smoothies. Since I saw your way to do them by placing the green and water first and that only fruits or vegies (no nuts), my husband and I enjoy them A LOT.
THANK YOU THANK YOU THANK YOU! And your book is so organized and so easy to use, it is really the best book I saw about raw food and my best helper in doing my recipes. Again, may God Bless You and please continue the good work you are doing but do not forget about prayer which is at least if not even more important than everything else!

I purchased your cook book and to be honest, It sat on my bookshelf for a few weeks. Eventually I started making the fruit veggies smoothies, my own concoctions too. I always made sure I poured some for my Mom (81 years old) as well. My Cholesterol level is now 178. It was once 276+. As for my Moms stomach problems and her aches and pains seem to have gotten better. Both of us have more stamina. I bring my veggie smoothie to work and drink it there. I no longer burn out early afternoon.

I notice that you are a nurse. I, too, am a nurse and have been practicing for about a year and a half now. I work in a combination telemetry/med-surg floor. I see so many patients with conditions that I am convinced would be improved by consuming raw foods. Wouldn’t it be wonderful if changes could be made so that patients could have at least some of the foods that would help their bodies heal themselves? Glad to know there are other nurses out there that have a holistic approach to life and healthcare.

I just wanted to say thanks. I have been using your book for two weeks now and haven’t made a single thing I don’t like. I am amazed at how wonderful and easy this way of eating is. Even my husband, who is a pasta and pizza man, loved the raw marinara sauce over shredded butternut squash. We are still making changes, but my kids love their smoothies. We have even got created and invented a few of our own, like “Purple Power” water, spinach, blueberries, green grapes and 1/2 pear.

One of the aspects of enjoyment is after I put the food into the dehydrator it turns out crunchy. For me that is very satisfying.

When looking for information to help me incorporate more ‘greens’ into my diet, I found your website on the internet. I had yet to purchase my first book on the topic as no books seemed to offer the information I was looking for in the format I was looking for. Until I found your website!
Your book, Transitioning to Living Cuisine, is wonderful! I was so happy to see the book combined with the noodle tool, the pump ‘n seal, and a nut milk bag!
I devoured the information in the book and used the noodle tool right away! The pump ‘n seal is so wonderful I want to give one to everyone I know!
I was trying new recipes just about every day and then I hit a wall! I was losing weight, feeling great and had the full support of my husband and one day ….I just stopped. It was as though I had learned nothing and I quickly returned to coffee, cheese and cooked foods.
A big cold/flu came through town and everyone we knew became sick for 1-2 weeks. Both of us became ill. I had it the worst and was laid out for two weeks.
I wondered the entire time that I was ill if I was stuck to my raw diet and drank daily green smoothies would the cold have been less severed and last a short amount of time? I had tons of mucous which wasn’t helped by all of the cheese I’d been eating in the weeks prior to getting sick.
All I know is that I felt the absolute best when I have a mainly raw diet. I have plenty of sprouted nuts and seeds in jars ready to eat. I know how to make many of the recipes. My falling off the vegan wagon was due to unaddressed emotional issues. Lying in bed getting well has given me ample time to begin addressing these issues.
A success? I feel like one. I wanted the skills to transition to living cuisine and I got those vital skills through reading your book and watching all of your videos. I found out the ‘why’ of my compulsive eating behavior and am addressing those issues.
I have improved health, weight loss and increased energy on the horizon! I know how to realize these things for me personally.
Yes, I’d say I’m a success and I’m experiencing such success one day at a time.

How are you??? I just wanted to let you know that I have been religiously drinking my green smoothie every morning.
Just made your Chocolate Buckwheat cookies for my girlfriend’s birthday who is doing the TLC program with me. She LOVED them, as did my granddaughter, Zora. I did add a bit more agave and about 1/2 C Chia gel as well. They were really yummy!!
I just got my new excalibur dehydrator a few weeks ago and I’ve been experimenting with making fruit leathers with chia seeds. So far the best ones have been with apples, orange juice, spinach, chia seeds (gel). They turned out a lovely spring green color…another hit with Zora…good way to get the greens into her tummy, although she has been staying with me for the last 3 weeks as her mom was sick and has been enthusiastically sharing my green smoothie with me.
Hope all is well with you…would have loved to come be a part of Kevin and AnneMaries event at your place. I love his Renegade Health Show…lots of good info and lots of fun.

Thank you for the Level 1 ebook. I love what you are doing and the fact you seem to offer the best of the different schools of Raw and combine the best of them in a quick simple no-nonsense way.
After 40+ years of a conventional cooked veggie and then vegan diet purely for ethical reasons, I have been very drawn to eating raw vegan for health for the past year or so(made dietry changes before that – omitting fat – except for flax oil and cutting out complex starches to attempt to beat level2 diabetes and brought myself of medication). However I have found the totally opposing viewpoints in the raw world confusing and end up not knowing what to eat – never seeming to have much time or planning skills either for all the soaking and dehydrating days ahead of a meal.
I only found your site from a link on Lifeit a couple of days ago and have been glued to it and the first newsletter (thank you) ever since.
I have done a few Living Cuisine workshops and have a couple of that school’s books but was never happy that fruit was so restricted and prefer to have the fiber content of smoothies as opposed to juicing. The large amount of fat and time it takes for the raw Gourmet dishes doesn’t appeal and the low fat high fruit approach sits better but is a bit austere though with no spices, garlic etc. So I am so happy to have found you, love the sound of your recipes and look forward to trying them knowing that they are quick and healthy.
